Pasture Raised Duck Eggs

Our ducks are raised on pasture with small amounts of supplemental grains. Ducks are fantastic foragers and utilize grass much better than chickens. They are great at catching bugs and enjoy burrowing into the dirt with their large bills to search for worms and grubs. Ducks also love slugs and snails which is good news for our vegetable garden and our livestock (snails are an intermediate host for flukes, a nasty internal parasite that affects goats, sheep and cattle)!

Duck eggs can be used any way you would use a chicken egg. They are normally larger than chicken eggs so make adjustments accordingly in your recipes. Some people think duck eggs have a stronger flavor than chicken eggs, and some people think they taste no different. I am one of those that does taste a difference. I notice that they have a more rich and pronounced flavor. I love duck egg omelets, the stronger flavor is great with onions and garlic giving the dish an almost meaty flavor.

If you find the flavor too strong for you, just put them in your baking recipes. They add richness and moistness without passing on the strong flavor. I have had customers report fantastic results with duck eggs in custards. One of my personal favorites is chocolate chip cookies with duck eggs in place of the chicken eggs. I like to beat the duck egg well before mixing with the other ingredients. It makes the most delicious, rich and moist cookies you'll ever have.
